Ingredients for Ube Cheese Pandesal
- 1/4 cup ube powder
- 150ml warm milk
- 3/4 cup of hot water
- 1 medium egg
- 2-tablespoons sugar
- 1-tablespoon yeast
- 3 cups of bread flour
- 2 tablespoons of butter
- 1/2 tablespoon salt
- 1-tablespoon liquid ube extract (optional)
- 2 tablespoons of vegetable oil plus more for greasing
- 1 block quick melt cheese (165g) cut into cubes
- Ube jam/ halaya (can be bought at some stores or you can make at home)
- 4 tablespoons of Breadcrumbs for coating
Steps to Make
Firstly, put ube powder into a bowl and pour in hot water into it. Now mix until totally rehydrate.
Take another large bowl and add flour, sugar, and salt. Then stir to combine well. Now pour in warm milk and oil. Then add egg, yeast, and mix well again.
Now add the rehydrate ube and ube flavor (if using) combine up to well mixed. After that, the mixture will be very thick so add some butter to it. Now mix until butter is well blended with the dough.
Next, sprinkle some flour on the flat surface that you going to kneading. Now grease your hand and knead the dough for 10-15 minutes or until the dough is stretchy well.
(Adding extra flour and grease your hands with oil, will help you to lessen the stickiness of the dough)
When the kneading is over, form the dough into a ball (round shape) and lightly coat it with oil.
Now take another bowl and grease it with oil. Then place the dough in it and grease the dough as well. Now you have to cover it with a kitchen towel or a plastic wrap and rest the dough for at least 1 hour.
After resting it for one hour, it looks like a doubled size. Now lightly punch down the dough to release air/gas bubbles.
Now brush the flat surface with oil or sprinkle some flour. Just lightly knead and roll the dough. Then cut the dough into your desired size and roll each piece into a ball.
Take the cheese cubes and prepare the ube jam/halaya (can be bought at some stores or make your own)
Now flatten each dough with rolling pin. Put the ube jam and cheese on the center of the flattened dough. Now seal all the dough and form it again into round shape. After that roll the doughs on bread crumbs until completely coated.
Then place the coated doughs on a greased tray. Cover and rest the dough again for 20 minutes. After 20 minutes, it is ready to bake. Preheat the oven for 10 minutes and bake your pandesals for 15-20 minutes at 180C. After 15-20 minutes, now your hot Ube pandesals are ready to serve.
Why is My Pandesal Not Fluffy?
If your dough looks like too much dry or not fluffy, it is because of you did not add enough water the dough. So if the pandesal impressions too dry then you can just add more water.
